
Directions for: Vietnamese Grilled Chicken
Ingredients
1 3 lb(s) chicken, halved
cup fish sauce
cup brown sugar
2 Tbsp lemongrass, chopped
1 Tbsp garlic, chopped
1 Tbsp Sambal Oelek or Sriracha
3 cups cold water
1 Tbsp soya sauce
Directions
1. Mix together all wet ingredients, making sure that sugar dissolved. Pour over chicken and let marinate for 6 hours. Drain and pat dry.
2. Grill over medium high heat until skin is crispy and bird is fully cooked. Alternatively, the chicken can be roasted in oven at 400F for 35-45 minutes or until internal temperature of 160F is reached.
3. Once cooked, cool and refrigerate. Cut into pieces or leave whole. Can be served from Ziploc bag or containers.
