Oven-Crisp Chicken

Directions for: Oven-Crisp Chicken

Ingredients

16 melba toast

2 Tbsp butter, melted

2 Tbsp mayonnaise, light

2 Tbsp mustard, Dijon

1 tsp thyme, dried

tsp salt and pepper

8 chicken, drumsticks, (about 2lbs)

Directions

1. Preheat oven to 425F (220C).

2. In food processor or plastic bag, crush melba toasts until in coarse crumbs; transfer to bowl.

3. Add butter; toss to combine.

4. Set aside.

5. In small bowl, whisk together mayonnaise, mustard, thyme, salt and pepper; spread over chicken.

6. Dip into crumb mixture, turning and pressing to coat.

7. Place chicken on rack on rimmed baking sheet; bake in oven for about 35 minutes or until golden and juices run clear when chicken is pierced.
