
A recipe is merely words on paper; a guideline, a starting point from which to improvise. It cannot pretend to replace the practiced hand and telling glance of a watchful cook. For that reason feel free to stir your own ideas into this dish. When you cook it once, it becomes yours, so personalize it a bit. Add more of an ingredient you like or less of something you don't like. Try substituting one ingredient for another. Remember words have no flavour; you have to add your own!
Directions for: Grains and Greens Soup
Ingredients
For the Chicken Broth1 large chicken carcass
2 onions, cut into large chunks
2 carrots, chopped
2 stalks celery, chopped
3 bay leaves
tsp salt
For the Soup1 cup of the whole grain of your choice (brown rice, barley, whole wheat berries etc.)
6 cup homemade chicken broth
A few large handfuls of baby spinach
Salt and pepper to taste
Directions
For the Chicken Broth1. Place carcass into a large soup pot and cover with cold water. Bring to a simmer and add vegetables, bay leaves and salt. Continue to simmer, skimming off any foam or impurities as they rise to the surface. Simmer for 1 hour and then strain into a clean storage container. Makes about 2 quarts.
For the Soup1. Bring the grains and the chicken broth to a simmer and cook until the grains are tender. At the last second stir in the baby spinach and cook just long enough to heat it through. Taste and add salt and pepper as desired.
