Directions for: BBQ Chicken Bacon Carbonara with Roasted Red Peppers, Cherry Tomatoes & Spinach
Ingredients
BBQ chicken breast
8 slices bacon
1 red peppers
Vidalia onion
3 clove garlic
1 handful spinach
1-2 cups heavy cream (35%)
12 cherry tomatoes
2 medium eggs
3 cup rotini pasta (or pasta of your choice)
salt and pepper
Parmesan cheese, grated
Directions
1. Season chicken breast with One Rub, barbeque the chicken, dice and set aside.
2. BBQ or roast red pepper, dice and set aside.
3. Cook bacon, dice and set aside.
4. Finely chop garlic, set aside.
5. Thinly slice onion, set aside.
6. Halve cherry tomatoes, set aside.
7. Beat eggs, mix in 1 cup of heavy cream, a pich of salt and pepper, put in fridge.
8. Cook pasta.
9. While pasta is cooking, lightly butter and or oil large frying/sauce pan.
10. Over medium heat add garlic, onion, stir and let saut for one minute (do not let garlic burn).
11. Add red peppers, cherry tomatoes and chicken, stir and lightly saut for 2 minutes combining flavours.
12. Add egg and cream mixture, bring to light simmer, add spinach, stir all ingredients this is your sauce (add more cream if necessary).
13. Strain pasta, portion on plate, cover pasta with creamy carbonara sauce.
14. Lightly finish with Parmesan cheese.
