Apple-Cheddar Chicken Sandwiches

Directions for: Apple-Cheddar Chicken Sandwiches

Ingredients

1 can (5.5 oz/184 g) flakes of chicken, drained and flaked

8 slices smoked chicken

4 oz (125 mL) Black Diamond Cheddar Cheese, shredded

cup (125 mL) diced apple

cup (50 mL) finely chopped celery

cup (50 mL) cold Lactantia Salted Butter

pkg (50 mL) chopped walnuts

cup (50 mL) mayonnaise

salt and pepper to taste

Boston or curly leaf lettuce

4 slices whole wheat bread

Directions

1. In a bowl, combine flakes of chicken, Black Diamond Cheddar Cheese, apple, celery, walnuts and mayonnaise. Add salt and pepper to taste.

2. If using smoked chicken, combine all filling ingredients except chicken and lettuce.

3. On 2 slices of bread, place lettuce; top with half half of chicken mixture OR slices of smoked chicken, half of apple mixture and remaining 2 slices of bread. Enjoy!
