Directions for: Cheesy Italian Chicken Skillet
Ingredients
4 boneless, skinless chicken breasts
tsp (2 mL) salt and pepper
1 Tbsp (15 mL) oil
2 cup (500 mL) marinara sauce
cup (125 mL) artichoke hearts
cup (60 mL) green olives, sliced
2 cup (500 mL) baby spinach leaves
cup (175 mL) Italian-blend cheese, shredded
1 pouch UNCLE BEN'S Bistro Express Long Grain & Wild Roasted Garlic Rice
Directions
1. Season the chicken with salt and pepper. Heat the oil in a large, nonstick skillet set over medium-high heat. Place the chicken in the skillet; brown on both sides. Add the sauce, artichoke hearts and olives.
2. Simmer, covered, for 15 minutes or until the chicken is cooked through. Stir in the spinach and sprinkle the cheese over the top. Cook for 2 minutes or until spinach is wilted and cheese is meted.
3. Meanwhile, prepare UNCLE BENS BISTRO EXPRESS Long Grain & Wild Roasted Garlic Rice. Serve rice with chicken.
