Directions for: Chipotle Chuck Steak Burrito with Habanero Hot Sauce and Guacamole
Ingredients
Luardos Chipotle Chuck Steak500 g chuck steak, cubed into 1-inch chunks
1 medium yellow onion, thinly sliced
1 tsp (heaping tsp) hot smoked paprika
1 tsp (heaping tsp) ground cumin
tsp ground cinnamon (or 1 cinnamon stick)
2 Tbsp dried oregano
olive oil, for frying
salt and pepper
1 cup chipotles en abodo
1 cup water
50 g dark chocolate
Guacamole4 Hass avocados
olive oil (a good drizzle)
juice of 1 lime
clove garlic, crushed
jalapeno, finely chopped
6 sprig fresh coriander, rougly chopped
red onion, finely chopped
tomato, finely chopped
salt and pepper
Habanero Hot Sauce6 habanero chilies
olive oil
juice of 1/2 lime
1 pinch caster sugar
Tomato Salsa4 ripe tomatoes, finely diced
Spanish onion, finely diced
red onion, fienly diced
1 handful chopped coriander
1 drizzle olive oil
juice of 1 lime
1 birds eye chili (optional)
2 pinch caster sugar
1 pinch sea salt
Assembly6 12-inch flour tortillas
Monterey Jack cheese, grated
2 cup long grain rice, cooked until fluffy, not wet
600 g black beans
1 recipe Luardos Cipotle Chuck Steak
fresh coriander, roughly chopped
1 recipe Guacamole
1 recipe Habanero Hot Sauce
1 recipe Tomato Salsa
iceberg lettuce, shredded
sour cream
Directions
Luardos Chipotle Chuck Steak1. In a large saucepan, fry the onions slowly in the olive oil until soft. Add the paprika, cumin and cinnamon and fry for another minute.
2. Add the chuck steak, oregano, salt and pepper, chipotles and water. Give the whole thing a good stir.
3. Bring to the boil and cook on a simmer for about 2 hours, checking that theres enough cooking liquid.
4. Right at the end of cooking, add the dark chocolate and stir in.
Guacamole1. Scoop the avocado flesh into a bowl and roughly mash. Mix in the remaining ingredients and season to taste.
Habanero Hot Sauce1. Put all the ingredients in a blender/food processer and blend until completely smooth.
Tomato Salsa1. Mix all the ingredients in a bowl. Give it a taste and add a little more lime/sugar if required.
Assembly1. Toast a tortilla in a large frying pan until slightly brown but not crispy (it still needs to be pliable for the wrapping). Add the grated cheese as its toasting to get it melting.
2. One by one add the burrito ingredients, adding as much or as little as you prefer. Wrap up your burrito, and enjoy!
