Latin American Mojo Chicken

Latin American Mojo Chicken
Ordinary chicken breast gets hit with Latin American flare through this spicy green sauce.

Ingredients

cup olive oil

4 cloves garlic, minced

1 jalapeno pepper, seeded, and, minced

2 tsp ground cumin

tsp salt

tsp pepper

3 Tbsp lime, juice

1 Tbsp sherry

1 Tbsp wine vinegar

4 boneless skinless chicken, breasts

Directions

1. In a small saucepan, heat oil over medium heat for 3 minutes or just until hot and oil begins to move on its own.

2. Meanwhile, in bowl, stir together minced garlic, jalapeo pepper, ground cumin, salt and pepper.

3. Pour in hot oil.

4. Whisk in lime juice and sherry.

5. Let stand for 5 minutes.

6. Add chicken breasts, turning chicken to coat.

7. Let stand for 5 minutes. (Make ahead: cover and refrigerate for up to 24 hours.)

8. Reserving marinade, place chicken on greased grill over medium-high heat; brush with reserved marinade.

9. Close lid and cook, turning once, for 10 to 12 minutes or until no longer pink inside.
