Directions for: Roasted Rosemary Citrus Chicken
Ingredients
1 whole Chicken, Organic if possible approximately 1.5 kg
50 g Butter
20 mL Olive Oil
2 sprig Rosemary, chopped very fine
1 Orange, zested
1 Lemon, zested
1 Bay Leaf
Salt and pepper
Directions
1. Preheat the oven to 400F for 10 minutes.
2. Rub the chicken with the butter oil rosemary orange and lemon zest and season with salt and pepper.
3. Season the cavity of the chicken with salt and pepper, well cut the orange and lemon in half, place one piece of each in the cavity. Add the bay leaf. Truss for roasting.
4. Place the chicken on a small roasting pan. Place in the warmed oven for 10 minutes.
5. Turn the temperature down to 375F and periodically baste the chicken with the excess oil and juices from the chicken. This will ensure the bird will not dry out.
6. The chicken is done cooking when the (internal)juices run clear.
