Directions for: Aunt Lil's Cabbage Rolls
Ingredients
Sauce2 Tbsp canola oil
2 large white onions, chopped coarsely
2 cups plain tomato sauce
2 (14 oz) cans cranberry jelly
2 Tbsp brown sugar
1 medium green cabbage, coarsely chopped
Meatballs32 oz ground meat (turkey, chicken or a combination)
2 eggs, beaten
cup seasoned breadcrumbs
cup parsley, finely chopped
2 onions, finely chopped
2 tsp salt
Directions
Sauce1. Heat oil in a large pot over medium heat; add onions and cook while stirring for 15 minutes, or until onions are soft and transparent.
2. Add tomato sauce, cranberry jelly, and brown sugar; simmer for 2 to 4 minutes, until all of the ingredients are combined.
3. Lower heat to medium low and stir in chopped cabbage; simmer for 10 to 15 minutes, until cabbage softens.
Meatballs1. While mixture simmers, combine meat with eggs, breadcrumbs, parsley, onions, and salt.
2. Mix thoroughly and form into palm-sized meatballs.
3. Add meatballs to the sauce and continue simmering over low heat for 2 hours, carefully stirring intermittently.
4. Divide mixture between six big bowls and serve.
