Dewon Chicken with Rice and Peas

Directions for: Dewon Chicken with Rice and Peas

Ingredients

2 tsp canola or olive oil (or cooking spray)

6 8 boneless, skinless chicken breasts (or 15 boneless, skinless thighs)

cup low sodium soy sauce

cup sweet and sour sauce

1 14 oz can (398 ml) pineapple tidbits with of the juice (reserve rest)

1 cup basmati or white rice

3 cup water

tsp Mrs. Dash Table Blend

Butter (optional)

Directions

1. Heat oil in large electric frying pan or spray pan with cooking spray.

2. Brown chicken on all sides.

3. Once all sides are browned, pour in soy sauce, sweet and sour sauce and pineapple tidbits. (Reserving the juice.) Keep adding balance of juice, depending on how long you will be simmering.

4. Cover. Set timer for 30 minutes at low simmer.

5. Combine rice and water in a microwave-safe pot or casserole. Microwave rice at high for 10 minutes then medium for 10 minutes.

6. Place peas in microwave-safe pot or casserole dish. Let stand. When timer rings for rice, cover and microwave at high for 5 minutes. When timer rings, stir and add spice. Let stand.

7. Microwave peas 2 additional minutes once thighs are ready. Add butter if desired.
