Collard Wrap

Directions for: Collard Wrap

Ingredients

3 leaves collard greens

2 carrots, shredded

1 avocado, sliced

cup purple cabbage, sliced thinly

cucumber, sliced into strips

9 Tbsp hummus

2 cooked chicken breasts or 1 can navy beans

Directions

1. Wash and dry the collard leaf. Take your knife, gently de-stem the leaf and do your best not to rip it.

2. Place your collard leaf down add 3 Tablespoons of hummus in the centre and spread. Top the hummus with shredded carrot, sliced cucumber, sliced cabbage, avocado and chicken or beans.

3. Do your best not to overload it. Once the filling is in the middle begin rolling it up like a burrito. Fold in the side closest to you, then roll the outer sides in. Continue to roll until the wrap is shut. You may want to use a toothpick so that it stays closed.

4. Repeat until all 3 collard wraps are filled and slice each one in half.

5. If you have an intolerance to raw collard leaves, you can very lightly steam them. This will also make them more flexible to work with.
