General Tso's Chicken Thighs

Directions for: General Tso's Chicken Thighs

Ingredients

2 tsp sesame oil

1 clove garlic, minced

1-inch piece fresh ginger, peeled and minced

2 Tbsp grated orange zest

1 Tbsp minced green onion

2 Tbsp rice vinegar

cup soy sauce

cup water

1 Tbsp cornstarch

cup honey

1 Tbsp chili paste

1 tsp peanut butter

1 tsp canola oil

8 chicken thighs

Chopped green onions (optional)

Sesame oil (optional)

Directions

1. Preheat oven to 450F (230C).

2. In a saucepan, heat sesame oil over medium low heat. Add garlic, ginger, orange zest and green onions; saut for one minute. Stir in rice vinegar and soy sauce.

3. Whisk together water and cornstarch; stir into pan. Stir in honey, chili paste and peanut butter. Reduce heat to low and stir occasionally until sauce thickens; set aside.

4. In a skillet, heat canola oil over medium high heat. Brown chicken thighs on both sides until golden brown. Drizzle about of the sauce over chicken and place in oven for about 20 minutes or until no longer pink inside.

5. Remove from oven and drizzle with remaining sauce. Sprinkle with green onions and sesame seeds, if using to serve.
