Pieces of chicken coated in a mixture of breading and caramel popcorn and fried until golden, topped with hot sauce and crumbled bacon.

Ingredients
Vegetable oil, for frying
1 cup flour
1 Tbsp cornstarch
1 pinch each salt and pepper
4 eggs
4 cups caramel popcorn, crushed/chopped
2 cups breadcrumbs
2 boneless, skinless chicken breasts, cubed into bite-sized pieces
Hot sauce
4 strips bacon, cooked/crumbled
Directions
1. Preheat oil to 425F (218C) in a medium pot. Preheat oven to 350F (175C).
2. In one bowl mix together flour, cornstarch, and salt and pepper. In another, beat the eggs. In a third bowl, combine the popcorn and breadcrumbs. Properly cover each piece of chicken with flour mix, tapping off any excess. Then place into the egg, and finally into the popcorn/breadcrumb mix.
3. Deep-fry a couple of pieces at a time until chicken is a light golden colour. Place them all on a lined baking sheet and bake for 15 minutes.
4. Remove and place in a bowl. Drizzle and toss the popcorn chicken with your favourite hot sauce, and crumbled bacon. Serve in a bowl and top with more hot sauce, crushed popcorn, and bacon.
