Directions for: BBQ Chicken Wraps with Sweet Potato Wedges
Ingredients
2 large sweet potatoes, cut into thin wedges
2 Tbsp olive oil
16 Life Choices chicken strips
1 Tbsp parsley, chopped
1 cup La Chauderie white Cheddar cheese
1 cup Life Choices BBQ sauce
1 cups Romaine lettuce or baby spinach, shredded
4 whole wheat tortillas
Directions
1. Place two racks in the oven and preheat to 400F.
2. Toss sweet potato wedges in oil and season with salt and pepper.
3. Spread a single layer on a baking sheet and bake for 15 minutes.
4. After 15 minutes, add chicken strips (also a single layer on a baking sheet) and continue to cook for 18 minutes. Check wedges for tenderness. If they are done, remove them from the oven and let them sit for a few minutes.
5. Meanwhile, toss the chicken in BBQ sauce to coat evenly. Sprinkle the wedges with parsley.
6. Assemble wraps by combining 4 sauced chicken strips, 1/4 of the cheese and a large handful of lettuce per tortilla.
7. Serve immediately.
