Use your favourite mushrooms in this easy but delicious dish or mix and match button, cremini, porcini, or even chanterelles. Brought to you by Uncle Ben's.
Directions for: Chicken and Rice with Mushroom Cream Sauce
Ingredients
1 Tbsp (15 mL) oil
4 boneless, skinless chicken breasts
tsp (2 mL) each salt and pepper (approx.)
1 Tbsp (15 mL) butter
1 onion, sliced
12 oz (375 g) assorted mushrooms, chopped
tsp (2 mL) dried thyme leaves
3 Tbsp (45 mL) all-purpose flour
1 cup (250 mL) chicken broth
cup (125 mL) 35% whipping cream
2 Tbsp (30 mL) parsley, chopped
1 cup (250 mL) UNCLE BEN'S NATURAL SELECT Roast Chicken Rice
Directions
1. Heat the oil in a large, nonstick skillet set over medium heat. Season the chicken all over with the salt and pepper. Place the chicken in the skillet and cook for 5 minutes per side or until golden. Transfer to a plate.
2. Melt the butter in the same skillet set over medium heat. Add the onion, mushrooms and thyme. Cook for 10 minute or until browned. Sprinkle the flour over the mushrooms; cook for 1 minute. Add the broth and cream; bring to a boil. Return the chicken to the skillet. Cook for 10 minutes or until chicken is cooked through. Stir in the parsley.
3. Meanwhile, prepare the UNCLE BENS NATURAL SELECT Roast Chicken Rice without the butter. Serve chicken and sauce over rice.
