Chicken Curry with Zucchini
Want to host a party of 10 and serve a healthy chicken dish? This recipe is a tasty, Bangladeshi-style answer.

Ingredients

8 pieces full chicken legs, cut in half to yield 16 pieces in total

5 medium yellow onions, chopped

4 medium zucchinis, diced

1 batch spices, mixed in a bowl (1 tsp turmeric, 1 tsp chili powder, 2 tbsp coriander, 2 tbsp cumin, 3 tsp salt)

2 tsp ginger-garlic paste

2 tsp tomato paste

A few cinnamon sticks

A few cardamom pods

water (see Cook's note)

Directions

1. On medium heat, add oil and fry onions.

2. Add cinnamon sticks and cardamom pods.

3. Add blended spices.

4. Add ginger-garlic paste, tomato paste and desired amount of water, and cover the lid for about 25 mins.

5. Add chicken and cover the lid for 20 mins.

6. Add zucchini and more water, and cover the lid for about 10 more mins.

Tips and Substitutions

Cook's Note:

Add water according to how much gravy you prefer.
