Directions for: Fajita Skillet Dinner
Ingredients
1 Tbsp (15 mL) oil
2 boneless, skinless chicken breasts, sliced
1 red pepper, thinly sliced
1 onion, thinly sliced
2 Tbsp (30 mL) Tex-Mex spice blend
1 cup (250 mL) UNCLE BEN'S NATURAL SELECT Spanish Style Rice
2 cup (500 mL) water
1 cup (250 mL) refried beans
1 cup (375 mL) Tex-Mex cheese blend, shredded
cup (60 mL) green onion, chopped
nacho chips, for serving
Directions
1. Heat the oil in a large, nonstick skillet set over medium heat. Add the chicken, red pepper, onion and spice blend. Cook for 5 minutes or until browned.
2. Stir in the UNCLE BENS NATURAL SELECT Spanish Style Rice until evenly coated. Add the water and bring to a boil. Reduce the heat and simmer for 15 minutes or until the fluid is absorbed.
3. Stir in the refried beans and sprinkle with cheese. Cover and cook until heated through. Sprinkle with green onion and serve with nacho chips.
