Harissa Chicken Burger

Directions for: Harissa Chicken Burger

Ingredients

Burgers

cup (60 mL) vegetable oil

1 Tbsp (15 mL) ground cumin

2 tsp (10 mL) cayenne

1 tsp (5 mL) lemon juice

tsp (2 mL) salt

4 6 oz (720 g) boneless, skinless chicken breasts

4 burger buns

cup (60 mL) plain yogurt

Salsa

2 navel oranges

2 tsp (10 mL) vegetable oil

tsp (1 mL) salt

freshly ground pepper

cup (60 mL) mint leaves, torn

Directions

Burgers

1. Stir oil with cumin, cayenne, lemon juice and salt in a medium bowl.

2. Add chicken and stir to coat. Cover and marinate for 30 minutes or up to 2 hours.

Salsa

1. Slice the skin off the oranges and cut into segments, removing any white parts. Chop and place in a bowl.

2. Stir in oil, salt, pepper and mint leaves. Reserve.

3. Oil grill and preheat to medium high.

4. Remove chicken from marinade. Place on grill and cook for 5 to 7 minutes per side, or until chicken is no longer pink in the centre.

5. Transfer grilled chicken breasts to buns. Top each burger with a dollop of yogurt and a scoop of orange-mint salsa.
