Directions for: Harissa Chicken Burger
Ingredients
Burgerscup (60 mL) vegetable oil
1 Tbsp (15 mL) ground cumin
2 tsp (10 mL) cayenne
1 tsp (5 mL) lemon juice
tsp (2 mL) salt
4 6 oz (720 g) boneless, skinless chicken breasts
4 burger buns
cup (60 mL) plain yogurt
Salsa2 navel oranges
2 tsp (10 mL) vegetable oil
tsp (1 mL) salt
freshly ground pepper
cup (60 mL) mint leaves, torn
Directions
Burgers1. Stir oil with cumin, cayenne, lemon juice and salt in a medium bowl.
2. Add chicken and stir to coat. Cover and marinate for 30 minutes or up to 2 hours.
Salsa1. Slice the skin off the oranges and cut into segments, removing any white parts. Chop and place in a bowl.
2. Stir in oil, salt, pepper and mint leaves. Reserve.
3. Oil grill and preheat to medium high.
4. Remove chicken from marinade. Place on grill and cook for 5 to 7 minutes per side, or until chicken is no longer pink in the centre.
5. Transfer grilled chicken breasts to buns. Top each burger with a dollop of yogurt and a scoop of orange-mint salsa.
