Simmered Mexican Spice Chicken

Directions for: Simmered Mexican Spice Chicken

Ingredients

1 Tbsp (250 mL) vegetable oil

4 boneless, skinless chicken breast halves

1 jar (440 mL) spicy salsa

cup (50 mL) water

1 cup (250 mL) frozen niblets whole kernel corn

cup (50 mL) chopped green onion

1 cup Black Diamond Mozzarella Cheese, shredded

Directions

1. Heat oil in skillet over medium-high heat; brown chicken 2 minutes per side.

2. Reduce heat to medium-low; stir in spicy salsa and water and simmer for 8-10 minutes until done.

3. Stir in corn and green onion and heat through.

4. Transfer chicken breasts to serving plate(s).

5. Spoon salsa mixture over chicken breast, sprinkle with Black Diamond Mozzarella Cheese and let stand just until cheese melts.

Serve over hot cooked rice or pasta.
