The Rollercoaster Funnel Cake
This crazy funnel cake is topped with buffalo chicken and a blue cheese dressing for maximum comfort food status!

Ingredients

Funnel Cake

2 cups milk

2 tsp vanilla

1 egg, beaten

2 cups flour

1 tsp salt

1 tsp baking soda

2 Tbsp sugar

4 Tbsp (1/2 stick) butter, melted

2 tsp garlic powder

Oil, for frying

Buffalo Chicken

cup hot sauce + 1/2 cup, for garnish

cup butter, melted

2 tsp chili powder

tsp salt

2 (6-oz) skinless boneless chicken, cut in half and 3/4 strips

Cooking spray

Blue Cheese Dressing

2 cups buttermilk

cup sour cream

1 tsp garlic powder

1 cup blue cheese, crumbled

1 Tbsp lemon juice

chives, finely diced

Salt and pepper, to taste

Assembly

Icing sugar

Coloured popcorn

Directions

Funnel Cake

1. In a bowl combine milk, vanilla, and eggs. In a separate bowl combine flour, salt, garlic powder, baking soda, and sugar. Slowly incorporate the dry mix into the wet mix. Add in the melted butter until well combined. In a deep-sided frying pan slowly warm up oil to 350F (175C). Once that temperature is reached, slightly lower the temperature to keep the oil stable.

2. Fill a squeeze bottle or piping bag with your funnel cake mixture.You can place the ring of a spring form pan in the oil to create a perfect circle. Start to pour the funnel cake mix over the pan of oil in a circular shape. As you pour, make sure to cross over the funnel thats frying to keep the shape. When youre happy with the design, let it cook for two minutes on each side. Place on a wire rack to drain off the extra oil. Continue until all batter is used.

Buffalo Chicken

1. Preheat oven to 350F (175C).

2. Combine hot sauce, butter, chili powder, and salt. Toss the chicken to fully coat with the sauce. Spray a baking sheet and cook the chicken for 15-20 minutes until done.

Blue Cheese Dressing

1. Combine all ingredients in a bowl using a hand mixer or wooden spoon. Place in a squeeze bottle.

Assembly

1. Preheat oven to 400F (200C).

2. Pile of the chicken on centre of each funnel cake. Reheat in oven for 10 minutes. Remove and garnish with coloured popcorn, hot sauce, and icing sugar. Drizzle the blue cheese dressing all over the funnel cake and chicken. Top with a spoon full of sour cream.
