Directions for: Coconut Shake and Bake

Ingredients

Mint Dipping Sauce

1 large bunch of mint, leaves picked

Zest and juice of 1 lime

1 cup coconut milk

1 tsp sugar

salt

Coconut Shake and Bake

1 whole chicken, cut into pieces

2 Tbsp vegetable oil

tsp cayenne (optional)

2 tsp garlic powder

cup panko (or course breadcrumbs)

cup shredded unsweetened coconut

salt and pepper

Directions

Mint Dipping Sauce

1. Place all ingredients in blender and puree until smooth.

2. Transfer to a bowl and place in refrigerator.

Coconut Shake and Bake

1. Preheat oven to 375F and line a baking tray with parchment paper.

2. Place chicken in a bowl, drizzle vegetable oil, toss to coat.

3. Season with cayenne and garlic powder, toss.

4. Place panko and shredded coconut in a resealable bag

5. In batches, place pieces of chicken inside bag, close bag, shake to distribute coconut and panko evenly.

6. Remove chicken from bag and place on baking tray.

7. Repeat process in batches with remaining chicken.

8. Bake in oven until chicken is golden brown and cooked through, approximately 45 minutes.

9. Serve with Mint Dipping Sauce.
