Indulge in this amazing brunch/dinner dish with all the trimmings.
Directions for: Savoury Waffle with Country Fried Chicken, Cherry Compote and Maple Butter
Ingredients
Fried Chicken1 whole chicken, cut into 8 pieces
2 cups (500 mL) buttermilk
1 pinch salt
4 cups (1 L) all-purpose flour
2 Tbsp (30 mL) salt
1 Tbsp (15 mL) pepper
tsp (2 mL) cayenne pepper
1 Tbsp (15 mL) dried oregano
Oil, for deep frying
Herbed Waffle Butter4 cups (1 L) all-purpose flour
1 tsp (5 mL) salt
tsp (1 mL) black pepper
1 Tbsp (15 mL) baking powder
2 eggs
2 cups (500 mL) buttermilk
2 cups (500 mL) homogenized milk
2 Tbsp (30 mL) unsalted butter, melted
1 lemon, zest only
1 tsp (5 mL) fresh thyme, chopped
1 tsp (5 mL) fresh rosemary, chopped
2 Tbsp (30 mL) chives
Maple Butter1 cup (250 mL) salted butter
1 cup (250 mL) maple syrup
Cherry Compote1 lb(s) (454 g) cherries, pitted (fresh or frozen)
1 orange, zest only
cup (125 mL) maple sugar
vanilla bean, split
Directions
Fried Chicken1. Add chicken pieces to the buttermilk with a pinch of salt and place in the fridge to marinate, minimum 20 minutes to 4 hours.
2. In a separate bowl, add flour, salt, both peppers and oregano, mix.
3. Remove chicken from buttermilk and place into the seasoned flour.
4. Knock any excess flour on the chicken and place into a deep fryer or pot of oil at a temperature of 325C for 10-13 minutes.
5. Remove from the fryer and season with salt and pepper.
6. Drain the chicken on a paper towel lined rack to prevent greasiness.
Herbed Waffle Butter1. Preheat a waffle iron.
2. In a bowl, combine all dry ingredients, mix.
3. In a large mixing bowl, combine all the wet ingredients and the zest and herbs, mix.
4. Slowly whisk the dry ingredients into the wet ingredients, avoid lumps by whisking.
5. Be sure to butter or spray the waffle iron with a non-stick spray to prevent the waffles from sticking.
6. Cook waffles until golden, 3-5 minutes.
Maple Butter1. In a pot, melt butter and maple syrup for 3-5 minutes, whisk until smooth. Set aside.
Cherry Compote1. Place all ingredients in a pot, cook on medium heat until thickened to a syrup consistency, about 10-15 minutes.
2. To serve: Place a waffle in the middle of a plate. Drizzle waffle with maple butter. Dollop compote on the side. Add fried chicken on top of the waffle and drizzle with more maple butter.
