This simple one dish casserole is packed with savoury Tex-Mex flavours perfect for weeknight dinners. Brought to you by Uncle Ben's.
Directions for: 7 Layer Tex-Mex Casserole
Ingredients
1 cup (250 mL) UNCLE BEN'S 7 Grains Medley
2 Tbsp (30 mL) Text-Mex spice blend
1 can (540 mL) black beans, drained and rinsed
1 cup (250 mL) corn
3 cup (750 mL) chicken, shredded
2 green peppers, chopped
2 cup (500 mL) Tex-Mex cheese blend, shredded
1 cup (250 mL) salsa
cup green onion, chopped
sour cream, for serving
guacamole, for serving
Directions
1. Prepare UNCLE BENS 7 Grains Medley with the spice blend.
2. Preheat the oven to 350F (180C). Spread the back beans and corn over the bottom of a 9 x 13-inch (3 L) casserole dish. Top with chicken, green peppers, the grains, salsa and cheese.
3. Bake, covered with foil, for 25 minutes or until heated through. Remove foil and broil for 3 minutes or until cheese is lightly browned. Sprinkle with green onion. Serve with sour cream and guacamole.
4. Tip#1: Serve the leftovers with warm tortillas to make tacos or with nacho chips for a fun and interactive dinner.
5. Tip#2: Omit the chicken and double the beans for a vegetarian friendly casserole.
