Directions for: Tesmole de Pollo
Ingredients
Tesmole de Pollo8 tomatillos
6 jalapenos
2 cloves garlic
1 onion
1 Tbsp cumin
cup zucchini
cup green beans
cup chayote
cup broccoli
chicken stock
1 chicken leg
Masa Dumplings1 cup maseca masa flour
cup water
1 pinch salt
Directions
Tesmole de Pollo1. Roast all the ingredients in a cast iron pan. Blend it and add chicken stock, putting it into a pot and cooking on low heat until it is reduced to 1/3 of the size. Add salt and pepper.
2. Blanch vegetables zucchini, green beans, chayote, broccoli) and add to the soup.
3. Roast chicken leg in the oven and add it to the dish.
Masa Dumplings1. Mix the masa flour with water and salt. Shape the dough into a ball with a hole in the centre. Pan fry it and add to dish.
