Flavour your own cream cheese and keep leftovers in the freezer!
Directions for: Spicy Chicken Salad Bagelwiches
Ingredients
For the Spicy Cream Cheese250 g (1/2 lb) cream cheese, softened
2 green onions, finely chopped
Juice of 1/2 lime
1 jalapeno pepper, seeded and finely chopped
For the Chicken Saladan avocado, diced
Juice of 1/2 lime
250 mL (1 cup) diced cooked chicken
180 mL (3/4 cup) canned corn kernels, drained
125 mL (1/2 cup) sour cream
1 plum tomato, seeded and diced
1 stalk celery, diced
1 green onion, finely chopped
60 mL (1/4 cup) chopped cilantro
5 or 6 drops jalapeno pepper sauce (or to taste)
Salt and pepper
For Assembly6 bagels
1 yellow bell pepper, cored and sliced into thin rings
6 leaves Boston lettuce
Salt and pepper
Directions
For the Spicy Cream Cheese1. In a bowl, with a fork mix all the ingredients until combined. Season with salt. Keep chilled.
For the Chicken Salad1. In a bowl, toss the avocado with the lime juice. Add the remaining ingredients. Season with salt and pepper. Keep chilled.
For Assembly1. Cut the bagels in half horizontally. Spread with the spicy cream cheese. Place 2 bell pepper rings and a lettuce leaf on the bottom half of each bagel. Top with chicken salad and the other half of the bagel.
2. Note: The bagels can be toasted if you like.
