A perfect appy for "pub or games night." The smoked paprika adds a distinctive smoky taste to the wings.
Directions for: Gluten-Free Parmesan Chicken Wings
Ingredients
3 lb(s) (1.5 kg) thawed chicken wings - purchase pre cut wings for convenience
1 cups gluten-free breadcrumbs
1 cups fine grated fresh Parmesan cheese
1 tsp smoked paprika or paprika
1 tsp chili powder
3 tsp onion powder
1 tsp garlic powder
tsp ground thyme
3 large eggs
cups buttermilk or milk
Directions
1. Line 2 baking sheets with foil and place a cooling rack on each pan. Lightly brush the racks with oil.
2. Pat the wings dry with paper towel.
3. In a shallow bowl mix together the cheese, breadcrumbs and spices.
4. In a separate bowl whisk together the eggs and milk of your choice. If using buttermilk reduce the eggs to 2 .
5. Dip each wing into the egg mixture; then into the bread crumbs, gently pressing and evenly coating. Shake off any excess.
6. Place on the racks, leaving a space between.
7. Bake in a preheated 375F oven for about 45 minutes or until golden brown and cooked through.
8. Time may vary depending on the size of the wings.
Tips and Substitutions
If your choose to use buttermilk - marinade the wings about 2 hrs before breading. If a cooling rack is not available line the baking pan with foil, lightly brush with oil. Place the wings on the pan; turn once or twice during the cooking time to evenly brown the wings.
