Directions for: Zesty Chicken Dog with Corn Avocado Salsa
Ingredients
1 pack Life Choices Chicken Dogs
6 hot dog buns
1 can corn niblets, or fresh or frozen
2 sprigs flat-leaf parsley, finely chopped
1 green onion, finely chopped
1 avocado, diced into small cubes
sweet red pepper, finely diced
zest and juice of 1 lime
tsp salt
Directions
1. Grill chicken dogs at 450F.
2. For salsa, combine corn, parsley, onion, onion, avocado, pepper, lime and salt moments before serving.
3. Serve corn avocado salsa on freshly grilled chicken dogs for a healthy Mexican-inspired barbecue. Salsa also pairs well with blue corn tortilla chips.
