
With "buns" made of sushi rice, this sandwich is filled with mango, cucumber, coriander, chicken satay and crispy pork crackling.

Ingredients
Rice Bread1 cup sushi rice
1 cups water
2 Tbsp sugar
cup rice vinegar
Assembly2 avocados, sliced
1 mango, sliced
1 bunch coriander
Pickled radish/cucumber
Chicken satay, premade
Pork crackling
Chili sauce
Directions
Rice Bread1. Mix rice and water, do not rinse the rice. Cover and bring to a simmer. Reduce and steam until tender, about 15 to 20 minutes. Let cool.
2. In large bowl mix a few pinches of sugar with a splash of rice vinegar and a pinch of salt. Add your rice and mix.
3. Form the sticky rice into triangles to create your bread.
Assembly1. Using the rice bread, create triple-decker club sandwiches using the avocado, mango, coriander, pickled radish/cucumber, chicken satay, and pork crackling. Drizzle chili sauce as desired on the inside of the sandwiches.
