Layers of fluffy pancake, tomato and lettuce and baked chicken, pork and herb patties drizzled with maple syrup.

Ingredients
lb(s) ground pork
lb(s) ground chicken
1 tsp kosher salt
tsp freshly ground pepper
1 clove garlic, minced
tsp dried rubbed sage
1 egg
cup milk
2 Tbsp butter
1 cup flour
1 Tbsp sugar
1 tsp baking powder
tsp salt
2 large tomatoes, sliced
head iceberg lettuce, shredded
cup maple syrup
Directions
1. Preheat oven to 350F (175C).
2. Combine the ground pork, ground chicken, salt, pepper, garlic, and sage into a large bowl. Gently form the meat into 4 balls, then lightly press into 6-inch wide, 1-inch thick patties.
3. Place patties in oven for 15-20 minutes.
4. In a medium bowl whisk the egg. Add milk and melted butter. Then slowly mix in the flour, sugar, baking powder, and salt.
5. On a griddle pour on batter in large 6-inch circles. When the pancake starts to bubble, flip. Cook until brown. Repeat until all the batter has been used.
6. To assemble, start with a pancake. Then add sausage patty, lettuce, and tomato. Drizzle on maple syrup and add another pancake. Repeat until all the pancakes and sausage patties are used. Serve with maple syrup.
