If this wont get the kids to eat their veggies I dont know what will. Carrots, sweet potatoes, onions and potato are grated and spiced just right, then baked until soft and pudding-like, before being torched with a crackling sugary top. Itll make your chicken sing.
Directions for: Sweet Potato & Carrot Kugel Brule
Ingredients
2 large carrots
2 large potatoes
2 sweet potatoes
1 small onion, peeled
cup vegetable oil
cup brown sugar
2 eggs, beaten
tsp cinnamon
tsp baking powder
1 tsp sea salt
Fresh cracked pepper
1 Tbsp parsley, chopped
cup sugar
Directions
1. Preheat oven to 350F.
2. Grate vegetables in a food processor (or grate by hand). In a large bowl mix together oil, brown sugar, eggs, cinnamon, baking powder, salt and pepper until combined. Stir in vegetables and mix until evenly coated.
3. Generously grease a 9 x 13-inch baking dish with about a teaspoon of vegetable oil, then pour in vegetable mixture, smoothing the top with the back of a spoon. Bake in preheated oven for 45-50 minutes or until lightly golden.
4. Evenly sprinkle the top of the kugel with sugar, then get out your handy blowtorch and get that sugar bubbly and browned. It will form a hard surface, ready for cracking. (This step is optional and can be skipped if you dont have a torch or fear open flames.)
