
Directions for: Chicken in a Light Cream Sauce with Rice and Broccoli
Ingredients
1 tsp olive oil
4-6 boneless, skinless chicken breasts (1 1/2 lbs / 675 g)
2 tsp prepared crushed garlic
2 cup low sodium chicken stock
5 cup frozen broccoli florets
1 cup basmati rice
3 cup water
cup low sodium chicken stock
1 cup 10% cream
1 tsp white sugar
Directions
1. Heat oil in a large non stick fry pan at med-high.
2. Place chicken and garlic in the pan.
3. Add chicken stock.
4. Keep simmering and turning chicken until broth has almost completely evaporated.
5. Meanwhile
6. Rinse broccoli in colander.
7. Place broccoli in a microwave-safe pot with lid. Cover and microwave at high for 3 minutes.
8. Remove from microwave and let stand.
9. Combine rice and water in a microwave-safe pot or casserole with lid.
10. Microwave rice at high for 10 minutes, then medium for 10 minutes.
11. Meanwhile
12. Once sauce has almost completely evaporated, remove chicken and set aside on a plate.
13. Pour 1/4 cup broth into the pan and stir to deglaze.
14. Slowly whisk in cream and sugar.
15. Return chicken to pan and heat gently in the sauce.
16. Set timer for 10 minutes.
17. Lift rice with a fork and return cover.
18. Let rest for five minutes.
19. When timer rings for chicken, reheat broccoli an additional 2 minutes.
