Chicken Sloppy Joes with Warm Bean Salad

Ingredients

Chicken Sloppy Joes

1 bag (750 g) McCain Superfries Homestyle Red Skin Potato Wedges

2 Tbsp (30 mL) olive oil, divided

1 lb(s) (459 g) ground chicken

1 medium onion, diced

1 Tbsp (15 mL) dried oregano

2 tsp (10 mL) smoked paprika

3 clove garlic, minced

1 28 oz can (796 mL) diced tomatoes

1 cup (250 mL) jarred roasted red peppers, chopped

3 Tbsp (45 mL) tomato paste

1 Tbsp (15 mL) brown sugar

1 pinch Salt and pepper to taste

4 hamburger or soft Kaiser buns, split and toasted

Warm Bean Salad

1 large red onion, diced

1 cup (250 mL) fresh green beans, cut into 1-inch (2.5 cm) pieces

1 cup (250 mL) frozen corn

1 cup (250 mL) drained and rinsed black beans

2 Tbsp (30 mL) chopped fresh basil, divided

Directions

Chicken Sloppy Joes

1. Pre-heat oven to 450F (230C).

2. Prepare McCain Superfries Homestyle Red Skin Potato Wedges according to package directions.

3. In a large skillet, heat 1 tbsp (15 mL) of olive oil on medium heat. Add chicken, onions, oregano, paprika and garlic; saut, breaking up the chicken, for 10 minutes or until fully cooked. Reduce heat to low and add tomatoes, red peppers, tomato paste and brown sugar; season with salt and pepper and continue to cook, covered, for 15 minutes.

4. Divide the Sloppy Joe mixture equally between the four buns and serve with McCain Superfries Homestyle Red Skin Wedges and warm bean salad.

Warm Bean Salad

1. In a large skillet, heat remaining olive oil over medium; add onion and saut for 2 to 3 minutes or until softened. Add green beans and saut for 2 minutes. Stir in corn, black beans and half of the basil; saut for five minutes or until heated through. Stir in remaining basil and season to taste.
