Hot Nashville

Directions for: Hot Nashville

Ingredients

Hushpuppy Waffle

2 cups yellow cornmeal

cup all-purpose flour

cup sugar

1 tsp salt

2 tsp baking powder

tsp baking soda

1 cup buttermilk

cup butter, melted

cup water, plus more if needed

1 cup onion, chopped

2 cups bell pepper, chopped finely

cup jalapeno, chopped

1 cup Cheddar cheese, shredded

Hot BBQ Chicken

8 cups chicken, smoked and pulled OR roasted and pulled

cup butter

cup all-purpose flour

2 cups chicken broth

cup Sriracha

cup BBQ sauce, Memphis-style

Hot Nashville

8 wedge Hughpuppy Waffle

1 recipe Hot BBQ Chicken

bunch fresh kale

1 quart vegetable oil

salt

4 slices bacon, cooked and crumbled

pepper sauce or hot sauce

Directions

Hushpuppy Waffle

1. Mix dry ingredients in large bowl. Add buttermilk, butter and cup of water, mixing well. Fold in remaining ingredients and add water if needed to thin batter to proper consistency should be like a chunky muffin batter.

2. Preheat a waffle iron and use a bit of non-stick spray. Scoop - cups batter into waffle iron and cook until done, about 4 minutes. Time and batter volume will vary depending on your waffle maker. If waffle iron isnt available, you make a hushpuppy pancake on a griddle instead.

Hot BBQ Chicken

1. Smoke or roast chicken, remove skin and bones, and pull into bite size pieces. Set aside.

2. Melt butter over medium heat in saucepan. Whisk flour into butter, mixing well, and continue to cook and stir constantly until roux, whisking constantly until all broth is incorporated.

3. Continue to cook a couple minutes, adding more broth if needed to reach a creamy (not pasty) consistency.

4. Remove from heat and add Sriracha and BBQ sauce. Add chicken to sauce and stir to coat. Return to heat if needed to heat chicken through.

Hot Nashville

1. Heat oil in large skillet to 350F.

2. Drop a few pieces of kale at a time into hot oil (careful of oil splatter when doing this), allow to fry 10-15 seconds on each side.

3. Gently remove from oil and let drain on paper towels. Sprinkle with salt while hot.

4. Assembly: Place a heaping mount of Hot BBQ chicken on each waffle wedge. Place a few pieces of fried kale over chicken, sprinkle with bacon and a dash of pepper sauce. Serve immediately.
