Directions for: Smoked Chicken Sandwich
Ingredients
Chicken Brinecup kosher salt
cup sugar
12 bone-in chicken thighs
Old Yella BBQ Sauce1 large onion, chopped
2 clove garlic, chopped
2 jalapeno peppers, seeded and roughly chopped
1 cup grainy mustard
2 cup yellow mustard
cup corn syrup
cup molasses
1 tsp cayenne pepper
2 Tbsp Worcestershire sauce
1 tsp kosher salt
1 tsp pepper
BBQ White Sauce1 cup mayonnaise
1 can apple cider vinegar
1 Tbsp freshly cracked black pepper
tsp kosher salt
tsp cayenne
Assembly4 - 6 soft buns
bread and butter pickles, sliced
Directions
Chicken Brine1. In a large airtight container, stir together 1 cup boiling water, kosher salt, and sugar.
2. Once sugar and salt have dissolved, add 4 cups of ice-cold water. Cover and refrigerate for at least 60 minutes.
3. Add chicken to brine and refrigerate for 24 hours.
4. Remove chicken thighs from brine and pat try.
5. If using a smoker, preheat to 225F. If using oven, preheat to 350F.
6. Place chicken on a greased roasting pan.
7. If using a smoker, smoke chicken for 2 hours, or until internal temperature reads 160F.
8. If using the oven, roast chicken for 45 minutes, or until internal temperature reads 160F.
9. Set chicken aside to cool while you make the barbecue sauces.
Old Yella BBQ Sauce1. Heat a small pan over low heat. Add onion, garlic, and jalapenos; cover and cook for 10 minutes, or until vegetables are fork-tender.
2. Transfer contents to a food processor and pure until smooth.
3. Cool to room temperature, then whisk in grainy mustard, yellow mustard, corn syrup, molasses, 1 teaspoon of cayenne, Worcestershire sauce, remaining kosher salt, and pepper. Set sauce aside until plating.
BBQ White Sauce1. In a medium bowl, whisk together mayonnaise, apple cider vinegar, fresh cracked black pepper, teaspoon kosher salt, and teaspoon cayenne.
2. Using a fork, shred the chicken.
3. Add pulled chicken to white sauce and stir well to combine.
Assembly1. Cut buns in half and add a heaping spoonful of chicken to the bottom bun.
2. Spoon Old Yella BBQ Sauce over the chicken, to taste, and garnish with a sliced pickle. Close bun and serve.
