Directions for: Poached Turkey Breast
Ingredients
1 boneless, skinless turkey breast (about 675 g or 1-1/2 lb)
4 cup chicken broth
salt and pepper
Directions
1. Place the turkey breast and broth in a large saucepan. Season with salt and pepper. Insert a meat thermometer into the centre of the breast. Cover and bring to a boil. Reduce the heat and simmer gently until the thermometer reads 82C (180F), about 30 minutes. Drain, reserving the broth for another use (mole sauce, soup, etc.). Tent the breast with foil and let rest for 5 minutes.
2. Slice and serve with Mole Sauce.
